    A Moroccan hall registers with ONSSA and must match sanitary and labelling rules before a litre or a tin is legal. Provincial inspection is part of that file. The stack is ministry-led, not an SFDA clone, which is why Casablanca regulatory-affairs staff still say ONSSA when they mean the factory dossier. After the stamp, milk and yoghurt leave Centrale Danone and Copag toward household fridges and toward hotel breakfast; the two books are different buyers. Sugar leaves Cosumar toward industrial kitchens as well as toward retail bags. Oils leave Lesieur toward fryers and toward household tins. Cheese portions leave Bel toward school-bag and HORECA specs. Tomato and jam leave Aïcha and Zahra toward pantry jars and toward catering. Beer and soft drinks leave Brasseries du Maroc and SGBB as draught, fountain and cooler contracts a grocery panel under-counts. Nestlé and Unilever culinary lines split chef packs from household jars. Oulmès and Sotherma fill still-and-sparkling coolers for cafés as well as for shops.
